#10: Cauliflower Pizza

Trying to fight off that pizza urge while keeping low on the calories, and obviously staying away from the refined grains? Look no further, this cauliflower-base pizza’s got you covered.

Below find instructions and ingredients for a recipe catering for a pizza that could be shared between two people.

Instructions

Place 1 cauliflower (900g; €0.10) , 1 egg (€0.25) and 30g grated mozzarella (€0.25) in a food processor and blend into a fine ‘risotto’.

Line a baking dish with baking paper and place the cauliflower ‘risotto’ on it, making sure to keep it even throughout. This is the pizza base. Refrigerate for 60 minutes.

In an oven pre-heated at 200 degrees Celsius, place the pizza base inside and let it bake for 60 minutes, until the base is nice and brown. Then take it out and let it cool.

Once the base is baked, add Barilla Vero Gusto Olive Sauce 150g (€1.50) and then add toppings (evenly). I used:

  • 140g green pepper (€0.65)

  • 100g diced onion (€0.14)

  • 100g Pecorino Romano (€2.13)

  • 100g tomatoes (€0.28)

  • salt

  • pepper

  • diced dried garlic

  • mixed Italian herbs
