#19: Shakshuka

Shakshuka is a Tunisian breakfast dish made of gently poached eggs in a delicious chunky tomato and bell pepper sauce.

Below find instructions and ingredients for a recipe that could serve 3 persons (depending on their own specific requirements)

Instructions

Sautee chopped onions (100g; €0.14), 2 red bell peppers (around 200g; 0.32), and 2 minced garlic cloves (6g; €0.20) with 1 tbsp extra virgin olive oil (€0.10) in a large, heavy skillet or pan (with a lid).

Season with salt, coriander, paprika, cumin, and pepper.

Cook for at least 5 minutes, stirring, until the veggies are tender, then add 5 fresh diced vine tomatoes (€2.10) and 1 Barilla Vero Gusto Tomato & Basil Sauce (300g; €3.05).

Bring the tomatoes to a boil, then cover and let simmer for about 15 minutes, then uncover and cook a few more minutes until your sauce has thickened.

When the sauce is ready, use the back of a spoon and make some holes in the sauce. Crack 6 eggs (€1.39) and nestle each egg in one of the holes you created. Cover the skillet and allow the eggs to simmer in the sauce over medium-low heat until the egg whites have settled (the eggs are supposed to be soft and somewhat runny. If you like your eggs hard, you can let them cook a bit longer).

Feel free to garnish with a little parsley on top (often-a-time, this is free!)

Serve immediately. You should have at least 3 portions.
